Pumpkin Chocolate Chip Muffins

These Gluten-Free Muffins are a breakfast staple at the Bostwick house! My kids love them and so do my husband and I! They are quick and easy to make! The best part is the ingredients are always in my pantry and I bet many of them are in yours as well!





Ingredients

2 Eggs

1 Cup Pure Pumpkin

1/2 Cup Coconut Oil, Melted

1/3 Cup Raw Honey

1 teaspoon Pure Vanilla


2 Cups Oat Flour

1 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1/2 teaspoon Sea Salt

2 teaspoons Pumpkin Pie Spice -or- (1 teaspoon Cinnamon, 1/2 teaspoon Ground Ginger, 1/4 teaspoon Nutmeg, and 1/4 teaspoon Ground Allspice or Cloves)


Dark Chocolate Chips


Equipment Needed

Muffin tin that makes 12 muffins.

Muffin cups or Spray to prevent sticking.


Directions

Mix together Eggs, Pumpkin, Coconut Oil, Honey, and Vanilla in a large bowl.

In a separate bowl, mix together Oat Flour, Baking Powder, Baking Soda, Sea Salt, and Pumpkin Pie Spice.

Mix the wet and dry ingredients together. Stir until combined.

Add the Dark Chocolate Chips. I just sprinkle in some, probably about 1/4 cup. Stir to combine.

Scoop into greased muffin tins or tins with cup liners.

Top with extra -oats, if desired, to make them look pretty.

Bake at 350° for 18-22 minutes or until a toothpick comes out clean.


Tips for Perfect Muffins

I store my muffins on a cake plate with a glass lid. You can also use an airtight container.

Always use Pure, Quality ingredients! It's what makes them taste better!


Health Considerations

If someone has a Gluten Allergy, you will need to use Gluten-Free Oats.

Yes, Oats are Gluten-Free. However, most processing plants where they are packaged process other food items that contain Gluten and cross-contamination may occur.

To be safe, use Oats that have Gluten-Free on the packaging.


Variations of the Recipe

Pure Maple Syrup can be substituted for the Honey.

DO NOT BUY OAT FLOUR! It is overpriced! You can make it on your own! All you have to do is add your regular oats to a blender and blend until you have flour.
