Mediterranean Tuna Salad - Amber Style

Are you looking for a quick, easy, and most importantly HEALTHY lunch? Then my version of the Mediterranean Tuna Salad is for you!

I whip up a batch of this salad and keep it in my fridge for a easy go to lunch, when my leftovers are lacking or I just do not feel like eating them again for the 3rd day in a row!

You can substitute anything you don't like for something that you do. Feel free to get as creative as you want! For me, that's what brings me joy in cooking! I haven't tried it yet, but I imagine substituting Chicken for the Tuna would taste great too!

The only thing I would suggest keeping is the Turmeric and Black Pepper because of the health benefits. Dr. Uma Naidoo suggests, in her book 'This is Your Brain on Food,' that Turmeric helps to reduce symptoms of Depression, Anxiety, PTSD, Dementia and Brain Fog, Obsessive-Compulsive Disorder (OCD), and Insomnia and Fatigue. She says, "Note that piperine, a constituent found in Black Pepper, increases the absorption and bioavailability of curcumin by 2,000 percent. So when you use Turmeric, always add some freshly ground Black Pepper too."



Mediterranean Tuna Salad - Amber Style

2 Cans Tuna, drained

Red or White Onion, chopped

1/2 Orange Bell Pepper, chopped

1/2 Red Bell Pepper, chopped

1/2 Green Bell Pepper, chopped

1/2 Yellow Bell Pepper, chopped

1/2 Cucumber, peeled, sliced, and cut into quarters

Black Olives, sliced

1/4 Lemon, zested & juiced

2 Teaspoons Extra Virgin Olive Oil

6 Teaspoons (2 Tablespoons) Red Wine Vinegar

Turmeric, to taste

Freshly Ground Black Pepper, to taste

*Any of the Vegetables that do not have an amount listed next to them, just add however much tastes good to you!


Drain the Tuna and place in a medium to large sized bowl. Flake the Tuna using a fork.

Chop all of the Vegetables and add them to the bowl. Mix the Vegetables & the Tuna together.

Add the Extra Virgin Olive Oil & Red Wine Vinegar. Stir to incorporate.

Add the Lemon Zest and Juice. Stir to incorporate.

Add the Turmeric and Black Pepper. Stir to make sure everything is mixed together.

Taste to make sure everything is to your liking.

Cover & place in the refrigerator for 15 minutes before serving.

ENJOY!

*Will last up to 3 days in the refrigerator, if not eaten first!
